Banana Buns...

Ingredients
2 1/2 cups self-raising flour
3/4 cup caster sugar
1 cup milk
1 cup mashed ripe bananas
2 lightly beaten eggs
1 tsp vanilla extract
1/2 tsp mixed spice
1/2 tsp ground cinnamon
1/4 tsp bicarbonate of soda
1/4 tsp salt
150g unsalted butter, melted and cooled
Preheat oven to a moderately hot 200oC [400oF].

Line a 12-hole standard muffin pan with patty cases.
Sift flour, salt and bicarbonate of soda into a bowl.

Add the sugar and mixed spice. Stir through the flour.
Make a well in the centre.
In a jug mix together the milk, eggs, butter,
mashed bananas and vanilla extract.
Pour this mixture into the well made in the dry ingredients.
Fold the mixture gently with a metal spoon until just combined.
The mixture should still be lumpy.
Divide equally among patty cases, filling each hole to about
three-quarters full.
Bake for approx 20-25 minutes until golden and cooked through.
Leave the buns in the pan for 5 minutes, then turn onto a wire rack to cool.

Avec son nouveau roman, "Mille Soleils Splendides", il nous raconte
l’histoire de la femme en Afghanistan.
Son rapport aux hommes, à commencer par le père,
le mari mais aussi le fils !!
Les taches ménagères, le port de la burka, la misogynie ambiante
et parfois les coups qui pleuvent
sont le quotidien de ses femmes…
Un vrai coup de coeur ! Parce que l'histoire est joliment contée,
parfois poignante, parce qu'à défaut de pouvoir agir,
il est important de ne pas ignorer...

I do really love the performing arts. The Theatre, the Ballet...
to name but a few...
I don’t use email as a means of thanking someone.
I still believe in a good old hand written note.
The sentiment is much more personal, wouldn’t you agree?
I do enjoy my alone time and treasure it...
I don’t drink diet drinks, nor do I use artificial sweetener. YUCK !
I do like a challenge...
I don't sunbathe. I love the outdoors but can do without the
damaging effects of the sun...
I do believe I can be stubborn, sometimes. Ok maybe a little
bit more than sometimes?
I don’t own a microwave. Never have and probably never will...

Chicken Tagine...

Ingredients - serves 6
X
1 chicken 1.5 kg / 3.3 lb, cut into pieces
2 preserved lemons
100 g / 1.5 cup green olives
3 onions, chopped
1 teaspoon ginger (fresh or dried)
1 teaspoon saffron
1 bunch flat parsley
1 teaspoon coriander / cilantro, chopped
Juice of 2 lemons
5 tablespoons olive oil
1 tablespoon butter
Salt, pepper
In a hot tagine dish, fry the pieces of chicken in the olive oil and butter,
adding the onions, bunch of parsley, ginger, saffron, salt and pepper.
Add three glasses of water and the sliced preserved lemons.
Cover and cook for 30 minutes.
Add a little water during cooking
if necessary and stir occasionally.
Add the coriander / cilantro and lemon juice,
and cook for another 15 minutes.
At the end of cooking, add the olives, and serve directly...
